I’m currently eating a high carb low fat vegan diet. Unlimited carbohydrates! I avoid gluten and soy as much as possible because they both flare up my Hashimoto’s Thyroiditis. Most days I eat as much fruit as I want during the day and a cooked vegan meal for dinner. A typical day looks like this:. Smoothie with 5-6 bananas (a few frozen, a few fresh), 1 cup coconut water, 1 cup of spinach (I don’t always do greens in my smoothies, sometimes I just don’t feel like it! Piece of fruit such as an apple.
