Tuesday, July 26, 2011. We decided to paint the bases to match our new color scheme. As was the case with the TV stand. We spray painted them with a grey primer and then a couple of coats of the same navy blue paint to match. Easy peasy! We like them. It's true that we don't really have anywhere to set them right now since we recently sold our end tables, but we're hoping they'll look nice in our new digs. :). Labels: Around the House. Monday, January 9, 2012. Black Bean and Squash Burritos. The hub and I made these black bean and butternut squash burritos. Tonight and they were super yum! I didn't have any vegan cheese on hand. So I ended up subbing some shredded mozzarella, but that was the only change I made. Since the recipe only calls for 1.5 cups of the roasted squash, we ended up having some leftover that served as a side. Super good and super filling! Labels: Being a Vegetarian. Monday, January 16, 2012. Buffalo Chickpea Baked Potato. When I stumbled upon this recipe for buffalo chickpea baked potatoes. I absolutely could not wait to try it for myself. There are few things I've missed since becoming a vegetarian, but buffalo chicken wings are one of them. The hub and I actually keep wing sauce. On hand to put it on just about anything. Pizza? Sure, why not? But, we've never thought to put it on chickpeas before and this turned out to be a great combination. Back in the Day.

If you are interested email me or call me! 3 C quick cook oats. 1 C mixed nuts. 1/4 C flax seeds. 3/4 C unsweetened shredded coconut. 1 tsp ground cinnamon. 1 1/2 C dried fruit (I use a mix of dried bananas, orange flavored cranberries, and dried apples). 8 Tbsp maple syrup or honey. 5 Tbsp olive oil. This recipe is from my good friend Amy, I modified it a bit. This recipe comes from my Grandpa Walker's mother.
