Sunday, July 6, 2008. I have always thought it would be so cool if I did a triathlon or ran a marathon, call me crazy. My neighbor apparently had the same thought. Two crazy minds think alike! So we decided to do the Summer Games Tri. We had four weeks to train! To bad I don't have any pictures of us killing ourselves training, but I do have some really good ones of the tri at Sand Hollow. June 14, 2008. The Swim is done, now to the bike. Getting ready to bike. And we are off. Finish line here I come!

I first had this wonderful dish during our stay in Mexico. It is originally a spanish dish but the Mexicans sure knew how to do this right! Crispy baby potatoes smothered in a spicy tomato jam then garnished with mayo and cilantro. I have been craving this since i have been back and went on the search for the perfect recipe! 3 slices Bacon (optional).
