Monday, April 21, 2008. MAKING THE MOST OF IT. This situation happens all the time: experiment with a new recipe, it calls for fresh herbs, and you purchase a packet (they are expensive) and you end up only using a tablespoon of the stuff. Then you're left with tablespoon after tablespoon of excess and no where to put it! I mean, sprinkling herbs over salad or adding a pinch here and there will only get you so far. What can you do with an excess of herbs? This was the precise culinary conundrum. You can ...

Monday, October 13, 2008. BRAISED BEEF IN THE "FRENCH STYLE". Oh, beef brisket! You are so delicious and amazing! I t couldn't be easier! To get started: pick your meat. Some cuts that are popular: Pork Butt, Pork and Beef Shoulder, Beef Brisket, Pork and Beef Cheek, Rib Meat, just to name a few. I chose Beef Brisket because I ate a delicious brisket at a holiday dinner in Rochester and I was hooked! NOTE: many recipes call for 3 to 4 pounds of meat for Braising. This makes a LOT of meat and you will...

Wednesday, March 25, 2009. When I was sick this past month and I felt very nauseous, my neighborhood coffee place came to my rescue. Outpost makes their own hummus and it's quite delicious. I ate a few orders of this to try to get myself on the mend and it helped tremendously! Their hummus is spicy and flavorful and a little more dense than most traditional hummus you buy at the grocery store. This makes enough for a week! 2 cans of Garbanzo/Chickpeas (15 oz). Juice from 1 Lemon. A few swirls of good EVOO.

Monday, February 2, 2009. RISOTTO ISN'T HARD TO MAKE. Yes, risotto is not hard to make. Believe me! In fact, it's pretty methodical and ripe for experimentation, as I found out about two weeks ago when a friend told me about it. Like many, I assumed this was a dish best left to the gourmet restaurant sous-chef, not a handy-dandy all-in-one-meal that I could just whip up in a whimsy- I'm so glad I was wrong. 1 to 1.5 cups of Arborio Rice. 1 small to medium Onion, chopped. 2 Tablespoons of Butter (salted).

Friday, February 29, 2008. MY GO-TO-DISH, YOURS TOO? I appreciate Rachael Ray's recipes. In my opinion, her approach to explaining a recipe puts one at ease instantly and really speaks to someone who might not know what “double boiling” is or what “julienne vegetables” really means either! I love her use of phrases like “palmful” and “glugs” and “eyeball it,” how refreshing and easy to understand is that! And my friends were asking for more, I was amazed- espeically because it was rather easy! I have als...

Thursday, March 5, 2009. EASY SALAD SERIES: Taco Salad. Salads are a food paradox because they seem simple and mundane- and are hardly alluring to order in a restaurant (at least for people like me! But when you eat a really great salad, it always delights and reminds you that this little collection of vegetables, cheeses, fruits and nuts can be heavenly and a great meal in itself. Monday, March 31, 2008. This weekend Steve fell ill and I was inspired to make the childhood feel-good dish my Mom made me every time I was sick going back as far as I can remember. 1 cup Split Red Lentils. Found in the Indian Specialty Isle, they are the only red/coral colored lentil, are usually "split" meaning the sphere of the lentil is split during the processing, this also helps to break down the lentil as you cook it and is better for easy digestion. 3/4 cup White Basmati Rice. 1 tsp of Salt.

This is a renewable resource we should be proud of and support.
