This cake not only looked awesome, but was delicious as well. It was time consuming but if you're into this sort of thing and have the occasion to make a rainbow cake, do it! Giving in one dessert at a time. Monday, November 21, 2011. Gingerbread with Whipped Cream Cheese Frosting. I'll admit, when I saw this recipe over on Jam Hands. A few months ago I was far more interested in the frosting then the gingerbread. It looks so ethereal and gorgeous! I pinned it and just kept waiting for the weather to turn cold enough that it seemed reasonable to make gingerbread. Cold Tea Gingerbread with Whipped Cream Cheese Frosting. Makes one 9" x 5" loaf. 1 tsp ground ginger. 1 egg, beaten.

I usually make my own marshmallow fondant, but I used Satin Ice fondant, which actually tasted pretty good, I would definitely use this over Wilton fondant again. The fondant did start to crack from the pressure of the top tier since I stacked the cake the night before. I think next time I would transport and then do finishing touches. Friday, August 21, 2015. These are the days. Summer is winding down so we have been full of filling up every last minute with fun! We took a camping and rafting trip with our friends, the De Jagers, which was a blast. And then the kids have each gotten to have a day of their choice that they can fill with whatever favorite activities they choose. Within a budget, of course :) 3 down and 1 to go! Thursday, July 2, 2015. The gang's all here! The IN crew just came in for a visit and helped us kick off summertime! With 13 of us in the house for a week, there never was a dull moment! We played in the pool, sipped our way through Napa, climbed around in Rock City, ate our way through San Francisco & had a major sugar rush at the Jelly Belly Factory. Friday, August 7, 2015. New friends and old.time away and time to play! Well, somehow we have already wrapped up July and moved into the last days of school-free fun. How quickly it all goes! We have been having fun new adventures like hosting Chinese students, biking on the Golden Gate Bridge and checking out crazy things at Ripley's Believe It or Not Museum. And we have had quieter moments like hiking through a Redwood Forest or saying good bye to dear friends. It's not as easy as they make it look :).
