Just the 3 of us, chatting about food. Garlicky Asparagus, Bell Pepper, and Quinoa Salad. August 11, 2014. This uses nearly the same dressing as my recent summer tomato salad. But makes for a heartier salad that can hold its own as a lunch dish or side. 1 bunch asparagus, cut into 1-inch pieces and steamed for a few minutes until crisp-tender, then chilled (ice bath or cold running water). 1 red bell pepper, chopped. 2 ounces feta cheese, crumbled. 1 avocado, cut into inch chunks. 2 tablespoons olive oil.
