Sunday, March 2, 2014. My version of fish tacos. Frozen peeled cooked shrimp. Lemon or lime juice. Optional: chile powder, cumin, tabasco sauce. Finely slice onion, peppers and cilantro. Sauté with oil and spices and lemon juice. Add frozen filets (3-4), shrimp (20-30), top with salsa and Tabasco, cover and cook for 10 min or until tender. Monday, April 27, 2015. Pho pho (fo fu). I can't help but try to replicate my favorite restaurant food. So this is my version of pho and I must say it's pretty amazing. Vermicelli rice noodles (I prefer the ones from my local Asian market). 6 oz thawed rinsed Frozen shrimp. 2 Chicken breast, shredded. 1 large squash and zucchini, chopped. 1 sweet yellow onion, chopped. 2 jalapeño, seeded and chopped. Sunday, October 19, 2014. A twist on your traditional spaghetti sauce. Have I mentioned how much I love spaghetti squash? I also really love to make my own sauce. I've added a twist that I just can't live without now. Sauté slivered onions with healthy dose of olive oil. Large can petite diced tomatoes. Can of italian seasoned diced tomatoes. Can of petite diced tomatoes. Can of tomato paste. Healthy dose of red wine. Seasonings: salt, pepper, basil, vegetable seasoning. Let simmer for 20-30 minutes.

Saturday, February 7, 2015. This is my favorite family recipe. I make it for every event, gift, etc. I skinnied it tonight by using vegetable noodles and it was delicious! 1-2 cooked chicken breasts. 2 zucchini, vegettid. 2 squash, vegettid. 2 celery sticks and 1/2 yellow onion finely chopped and sautéed. 1/2 can tomato soup. 1/2 can heart healthy cream of mushroom soup. 1/3 can drained rotel. 2 oz drained pimentos. 1-2 cups of shredded cheese (preference). This serves 6 and is 120 calories per serving.

Snack bites 2.0. You might remember these. From a while ago. i still love them, but i made up a little variation that i might like even better. i love chia seeds! They are great for natural energy and their addition make these powerful little protein snacks even better (and provide a little crunch). 1 cup uncooked oats. 1/2 cup coconut flakes. 1/4 cup ground flaxseed. 3/4 cup peanut butter (or any nut butter). 1/4 cup mini chocolate chips. 1/4 cup chia seeds. Mix well, roll into balls and enjoy!

One 15-ounce can chickpeas, also called garbanzo beans. 1/4 cup fresh lemon juice, about 1 large lemon. 1/8 - 1/4 cup tahini.
