Tuesday, 11 February 2014. Dairy Free Carrot Cake. My wife has been working her way through our big bag of carrots. That we got given. This is good for me as it means one thing - cake! Poor quality photo sorry - but it tastes amazing! She's been playing with the recipe and I'd say its as near to perfect as it's going to get:. 175g light muscovado sugar. 3 eggs, beaten. 175g self raising flour. 1 tsp bicarbonate of soda. 1 tsp of cinnamon. 1/2 tsp ground nutmeg. 1/2 tsp ground ginger. Or this year even!

Monday, 29 June 2015. I've just noticed that is is my 500th post I've written for this blog and it feels like a real milestone. I posted my first post. About our life on this little homestead on the 3rd of March 2012 as I wanted to keep a record of what we were doing here. Three years later a lot has changed, we've had another child, I've become a stay at home parent, I've planted trees, grown loads of food, breed chickens, purchased sheep, rented land, the list goes on! Thursday, 31 July 2014. Or Zucchini to the Americans! I've been loving this salad lately, it's my new favourite and a great way to use up a few courgettes! It's really simple, use a vegetable speed peeler to create thin strips of courgette, then add a salad dressing of 2/3 olive oil to 1/3 lemon juice (from a lemon not a bottle as it tastes so much better), chuck a bit of feta cheese and a handful of mint leaves in and mix it up. Thursday, 7 August 2014. We've so many tomatoes at the moment it's tricky to know what to do with them all. One of our favourite meals with them is this tarte tatin. Simply fill a roasting dish with cherry tomatoes, a good glug of balsamic vinegar and olive oil, some chopped up rosemary and thyme. Sunday, 17 May 2015. Had one of my more unusual jobs to do this weekend. Someone had ordered eight 45cm diameter discs out of MDF for a project they were doing. 45cm disc of MDF. To make them all the same size I made a jig and cut them with the router. Jig made for the router to cut circles the same size. Completed stack of discs.
