Start to finish, making a starter that is active enough to use in baking will take about 7 days, but keep in mind, you only have to do this once! Mix 100 gm whole wheat flour, 100 gm unbleached white flour, and 130 gm water. With clean hands, knead until smooth; this will make a stiff dough. Remove all but 100 gm of the initial mix.
