Monday, October 27, 2014. Acorn Squash with Mexican Braised Chicken and Orzo Salad. Roasted ACORN SQUASH / MEXICAN braised chicken and ORZO salad. There's no real inspiration here besides, just, fall. I had an acorn squash around, because you see them in the store and you just have to buy one. You're not going to not put that in your cart. So I had one, I baked it, and I filled it with something hearty. It was tasty. It looks pretty, too. Enjoy. 1 large boneless, skinless chicken breast. 1/2 tsp. salt.

Sunday, December 7, 2014. Holiday Brussels Sprout Salad. Shaved BRUSSELS SPROUT HOLIDAY salad. Pomegranate / walnut / farmer's cheese / maple-mustard vinaigrette. Salad this time, and it was good enough to try and replicate at home. 1 lb ( 4 cups) thinly sliced brussels sprouts. 1/4 cup chopped mint leaves. Seeds of 1 medium pomegranate. 1/4 cup chopped walnuts. 1 cup creamy farmers' cheese (or labneh). Salt and pepper to season. Juice of 1 fresh lemon. 1 tbsp. whole grain mustard. 3 tbsp. olive oil.
