I love Mexican food- the hit of chilli, bite of beans, smokey chipotle and cooling avocado; and this dish is so easy and quick to prepare and all the family will love it. 1 tbsp sunflower oil. 1 orange pepper, deseeded and chopped finely. 2 spring onions, chopped finely. 3 tbsp tomato puree. 1 tsp chilli powder. 1 tsp smoked paprika.

Add in the nostalgic sweet-shop flavour of vanilla and a grown up twist of rose extract with a topping of crunchy pistachios, to give a Persian twist to the pudding. 1 tbsp caster sugar.

This has become one of my go-to recipes for when I have no time to spend in the kitchen and I need a bowl of something hot, fresh and tasty. This pad thai uses simple store cupboard ingredients for a fresh and fuss-free dinner. Add more or less chilli to taste and be generous with the fresh coriander! 1 tbsp sunflower oil. 1 tsp dried chilli flakes. 6 asparagus spears, chopped roughly. 6 Tenderstem broccoli florets. 10 sugarsnap pea pods.

Friday, 24 April 2015. Mango and passion fruit fool with whipped coconut cream. The sky is blue and the sun is shining, so it's time for something tropical. Even if it's not quite warm enough to take off your coat. What could be better than fresh tropical fruit, cooked down with plenty of lime juice, sandwiched between layers of whipped coconut cream? 2 mangoes, sliced finely. 4 passion fruits, skins discarded. Juice of 2 unwaxed limes. 1 can of coconut milk, chilled. 1 tbsp Cocofina coconut nectar.
