Life in Merry Land: Our Merry Life in Maryland. Monday, August 27, 2012. One of my favorite dinners is my mom's chicken enchiladas. They are so yummy! And pretty easy to make. The recipe calls for boiling a chicken, but I usually buy a rotisserie chicken (they are easier and cheaper). 1 cup chicken broth. 8 oz sour cream. Can cream of chicken soup. 1 med chopped onion. 1 small can chopped green chilies, drained. 2 cups shredded cheddar cheese. Cook chicken (or use a already cooked rotisserie chicken).
