Serve it with a fresh salad and some salad cream for a tasty, filling lunch. 250ml crème fraiche. 1 tbsp. olive oil. 100g grated gruyere cheese. 50g grated cheddar cheese. Preheat the oven to 200C. This dish is beautiful as a side dish but it's also lovely as a light lunch when served with a few slices of crusty bread. 1 tbsp. olive oil. 3 tbsp. extra virgin olive oil. 1 tbsp. white wine vinegar. 2 tbsp. finely chopped tarragon. 1 tsp wholegrain mustard. Halve the leeks and steam them for around 6-7 minutes. Make the dressing by whisking together the olive oil, vinegar, and mustard. Once smooth, stir in the tarragon and season well with salt and pepper.

Sautéed Leeks with Onion. A quick and simple leek dish that is perfect to serve with any roast meat. 1 knob of butter. 1 tbsp. olive oil. Wash the leeks and cut them in the middle lengthways before finely slicing them. Finely slice the shallot into half-moons. Heat the oil and butter together until foaming and then sauté the shallot for ten minutes until very tender. Add the chopped leek and cook for another 15-20 minutes or until soft and delicious.
