Saturday, February 2, 2008. Not to sound like a broken record or anything, but I’m really trying to make healthier food for my family to eat. That includes more leafy green veggies. This idea presents a bit of a problem as my wonderful hubby has an aversion to leafy green veggies in a cooked form. So I’m getting a little creative to find out just how far I can push the taste experience. So far, kale, while a truly nutritious green, has not made the cut. Spinach is OK as long as it’s a salad. Chicken with Zucchini (crock pot). 2-3 boneless chicken breasts. 1 teaspoon seasoned salt. 2 tablespoons grated Parmesan cheese. 1 pound zucchini, cut into thin slices. 1/2 cup chicken broth. 1 (4 oz) can mushrooms, drained. Sprinkle seasoned salt over chicken. Mix flour, salt, pepper, cheese and paprika and coat mixture over chicken. Put zucchini in bottom of slow cooker. Pour chicken on top.
