Wednesday, August 13, 2014. Quinoa and Veggie Stuffed Zucchini. 2 T olive oil (or coconut oil if you prefer). 1 medium onion, diced. 1 red or yellow pepper, diced. 2 Roma tomatoes, finely diced. 1 Tbsp thyme or 1-2 sprigs fresh thyme leaves. 6 medium zucchini, halved lengthwise. 1 cup spinach leaves, chopped. 1 cup cooked quinoa. 3-4 large basil leaves. 1 T Parmesan cheese, grated. 1/2 c Mozzarella, grated. Preheat oven to 375. Distribute filling evenly into halved zucchinis. Remove from oven and serve.
