Before, but truth be told felt like just chucking in the spices I fancied tonight. These below are probably some of my all time favourite spices, so it was always going to be a winner dinner. 4 shallots, diced. 1 tbspn pul biber. 1 tspn ground cumin seeds. 1 tbspn za’atar. 1 tspn fresh thyme. I’ve overindulged, but not on chocolate. I’ve eaten a lot of fantastic food and drunk a look of pretty great wine. Oops. On Good Friday it was my birthday and I treated myself to lunch at Honey & Co. And ate the most incredible sweetbreads and bavette steak and chips. We drank A LOT of wine that day, which was fun. 1/2 tspn smoked paprika.

I’ve previously shared a recipe for braised fennel in orange juice. And if you still haven’t tried this technique it’s about time you give it a go! I’m a big fan of roasted fennel but there’s a buttery quality than braised fennel achieves and you just don’t get this with roasted fennel. Yum. 2 fresh rainbow trout, gutted with heads, scales and fins removed.

After numerous sleepless nights and pots of coffee, the decision has been made (for better or worse) that my focus should now lie solely in jewelry, as I find it to be a pleasant mix of challenging and rewarding most intoxicating.
