The almost daily explorations and reflections of a suburban mom and wife. Wow 7 years. I can't believe that 7 years ago we were newlyweds on a high from one of the best weeks of our lives. The few days leading up to our union, our perfect wedding day and amazing honeymoon reminded us that although a short night away was definitely needed, we SO need a vacation, just the 2 of us. Maybe one of these years we'll get around to it! Our anniversary also happened to fall on Meyer's 15 month birthday! After a (s...

Tuesday, April 10, 2012. Recipe #14 - Chicken and Brown Rice Pilaf. My mom gets a Kraft Foods magazine every so often. I used to get it, but it randomly stopped. Oh well. It always has a lot of good looking recipes, and I'll honestly admit I've tried quite a few! So far, I tried 2 from the recent magazine she let me borrow. The first one, yuck! This second one, yummy! Is the link to Kraft's website with the original recipe. I'm only going to show my modified recipe below! 3-4 slices of bacon, chopped.

The almost daily explorations and reflections of a suburban mom and wife. This past weekend was filled with family, friends, fun and forgetfulness. Friday kicked everything off. We decided it would be fun to meet some friends up at a local carnival. Logan is not crazy about rides. Who am I kidding? That and the fact it reminded me of a recipe I made last summer for tequila soaked watermelon wedges. I was definitely up to the challenge. Sugar syrup? Check Pureed, strained watermelon? I laughed out loud...

I ran the Bank of America Shamrock Shuffle 8K over a week ago and I still haven't written a race report. For a race I was so psyched about! Things just get busy or I start writing and get side-tracked.that's what happens. Life is busy! Sunday, March 21, 2010- the Shamrock Shuffle! I woke up that morning with a start. Race Day! We chatted and caught up and then we made it in...

The almost daily explorations and reflections of a suburban mom and wife. Our kitchen remodel.befores and durings! Looking back, we thought our kitchen and dining area remodeling project would be a lot easier than it turned out to be. Isn't that always the case though? But for the most part, we stayed pretty much on budget and we'll have to save up for the little touches that will personalize the space especially for us! I can live with a functional space for a bit until it gets beautified! Bye, bye ugly...

The almost daily explorations and reflections of a suburban mom and wife. Logan is fabulous FOUR today! I remember the day I became a mom so vividly. It was 4 years ago exactly and I could use lots of words to describe it- but the first one that comes to mind is surreal. Maybe because my birth experience was a little bit different than most.maybe because it was happening to ME and not someone else. Yes, it's been awhile! Our family has lots to celebrate these days. A milestone family anniversary, my ...

The almost daily explorations and reflections of a suburban mom and wife. Another awesome restaurant review. This time, we stayed a bit closer to home. Actually, a lot closer to home! Tallgrass, in downtown Lockport, is a whopping 5 minute car ride from our house and that in itself is appealing. Fine dining basically in my backyard? A definite plus in my book. Three Cheese Ravioli with Leeks, Pinenuts and Lemon Butter. Foie Gras with Crispy Proscuitto. Seared Ahi Tuna with Pickled Onion and Wasabi. The B...

Saturday, February 18, 2012. Recipe #9 - Chicken Avocado Melt. This recipe we just had tonight! It's really good, and pretty easy to make. I love avocados, and quite honestly, I thought they were what made the dish so good. Even Rusty ate the avocados! 4 boneless skinless chicken breast halves. 2 tsp ground cumin. 2 tsp garlic powder. 1/4 tsp cayenne pepper. 1/4 cup vegetable oil. 1 medium avocado, thinly sliced. The original recipe (from. The Best of Country Cooking 1998. Recipe #8 - Baked Potato Soup.

Saturday, December 22, 2012. Recipe #26: White Chocolate Peppermint Bark. Every year, around the holidays, I bake way too much. For the last 3 years, peppermint bark has been on my list. This year, I wanted to change it up a bit. In the past, I followed this. Recipe exactly. I've never been disappointed with it, and I liked how it was layered with milk chocolate and white chocolate. 16 oz (4 bars) of high quality white chocolate. 2 teaspoons of canola oil. 1/2 teaspoon of peppermint extract.
