Thursday, March 27, 2014. I love fried eggplant. It's hearty and meaty, and it makes one heck of a burger. But I don't like making it with eggs. This batter is light and crispy without that heavy, eggy, soggy texture. Eggplant is the meat-loving vegan's best friend. It happily takes the place of a variety of meats in many different dishes. To choose a ripe, not-over-ripe eggplant, look for a smooth, dark skin and firm, slightly spongy flesh. 1 large, ripe eggplant. Wash and slice eggplant. Set aside.

Saturday, August 23, 2014. Today was the long-awaited Spartan Race! We found out that there was a "Junior Varsity" Spartan Kids Race, and Duncan was pumped to get to participate! He's been training alongside Daddy from the very beginning, and he was dying to get to see it in action! He was very excited when we got there.he could really feel the energy! It was in the mid 70s, very foggy and cloudy, but it was good race weather for Mommy! Showing me his muscles. The mud pits were awesome. And into a mud pit.

Thursday, August 28, 2014. A Restful School Year 2014-2015. We are expecting our 5th little berry in December. Right smack in the middle of our school year. My pregnancies aren't easy, so our school year will have to be. Except, I can't do that much. I need to rest. And after baby comes, I will have to tend to that little person above all else. Wednesday, May 8, 2013. April really seemed to fly by this year for our little family. We were so excited for May to come that we breezed right through it. :). Here we are with the Collier Family traditional Easter Bunny Cake. Daddy wasn't exactly pleased with my Piccaso-like twist on the bunny. Whit didn't mind.it tasted delicious. Monday, September 9, 2013. July and August 2013. We had an awesome summer. Mommy took us on so many adventures.I'll let the pictures do the talking. Here we are at the beach. It was our first trip to the beach.Mommy hadn't been to the beach in 12 years, and the last time she went to the Outer Banks, she had just graduated from High School!
