Alice Waters’s Chickpea and Broccoli Rabe Soup. 3 tsp olive oil. 2 slices pancetta, chopped fine. 1 large or 2 small carrots, peeled and diced. 2 celery stalks, diced. 1 onion, diced. A pinch of dried chile flakes. 4 garlic cloves, chopped. 2 cups cooked chickpeas. 2 cups chickpea cooking liquid. 2 cups chicken/vegetable stock. 1 bunch broccoli rabe.

And it was beautiful: a strawberry gelatin filled with fresh blueberries and elegantly rounded by a 1950s bundt pan.
