Original recipe here. 200g good quality dark chocolate, about 60% cocoa solids. I use 150g Tudor’s Dark Choc, 55% cocoa 50g Tudor’s milk choc). 1 tbsp instant coffee granules. I reduce this to 1 tsp only to minimize caffeine and coffee taste). 1 4 tsp bicarbonate of soda. 200g light muscovado sugar. 200g golden caster sugar. Also reduce quantity to 150g).
