Lunch with Lynn

I don't claim to be a food expert, just a food lover! Thursday, March 26, 2009. While Matt and I were living with his parents, we occasionally when to a Middle Eastern restaurant called Shadi’s (spelling? I fell in love with their fattoush. I knew I wanted to recreate this meal sometime, and this week seemed like a good time to try it out. I looked up ingredients typically found in fattoush, but didn’t really use an established recipe. Lunch with Lynn: June 2008

http://www.lunchwithlynn.blogspot.com/2008_06_01_archive.html

I don't claim to be a food expert, just a food lover! Monday, June 23, 2008. It's been too long! It has been a LOOONG time since my last post! These past few months have flown by with the blink of an eye, and unfortunately, without any additions to the blog. To be truthful, there hasn’t been a whole lot of cooking going on around these parts. But, now that I am out of school (I think I am more excited than my students for summer vaca! Grilled Veggie Salad with Chicken and Goat Cheese. I mixed the ground ...

I don't claim to be a food expert, just a food lover! Monday, June 23, 2008. Grilled Veggie Salad with Chicken and Goat Cheese. I really wish I could remember this dish in more detail, because it was FANTASTIC! This would be FABULOUS without the asparagus. Girl who hates asparagus ;-). June 23, 2008 at 2:42 PM. Lunch with Lynn: Spicy Chicken Tortilla Soup

http://www.lunchwithlynn.blogspot.com/2008/12/spicy-chicken-tortilla-soup.html

I don't claim to be a food expert, just a food lover! Monday, December 22, 2008. Spicy Chicken Tortilla Soup. I looked at a few recipes, and sort of combined my favorite things from a few of them to create the recipe below. I will say that most of my inspiration came from, gasp, Rachael Ray. 1 lb chicken breast, diced. 1 red bell pepper, chopped. 1 yellow onion, chopped. 1 can corn, drained. A few large carrots, chopped. 2 peppers in adobo sauce (canned), finely diced (I used 3 and it was too hot! It was...

Lunch with Lynn: Guinness Onion Soup

http://www.lunchwithlynn.blogspot.com/2009/03/guinness-onion-soup.html

I don't claim to be a food expert, just a food lover! Tuesday, March 17, 2009. I am 100% Irish. Matt, despite his Italian look, does have a little Irish in him, too. But we did not have corned beef and cabbage for St. Patty’s Day. We are having it at the end of this month for family (our first gathering at our new house! But I couldn’t just ignore my heritage altogether on this wonderful day. 5ish pounds yellow onions, halved, and sliced 1/4-inch thick (I wanted leftovers to freeze). 6 cups beef stock.

Thursday, July 19, 2007. Roasted Chicken and Potatoes. For the potatoes, I toss cubed yukon gold potatoes with tons of fresh minced garlic, salt and pepper. Monday, July 23, 2007. Black Bean and Corn Enchiladas. I saw this recipe on WC a while back and tweaked it a little to our tastes. They came out very good and are a nice alternative to a meat filled enchilada. Black Bean and Corn Enchiladas. 1/2 cup chopped onion. 1/2 teaspoon ground cumin. 1/2 teaspoon dried oregano. 1/2 teaspoon chili powder. 2 garlic cloves, minced. 1 (15-ounce) can black beans, rinsed and drained. 3/4 cup bottled salsa. 3 ounces reduced fat cream cheese, softened. Lauren's Culinary Creations: Colorful, healthy and delicious!

http://laurensculinarycreations.blogspot.com/2007/08/colorful-healthy-and-delicious.html

Wednesday, August 1, 2007. Colorful, healthy and delicious! When DH is away, I like to make things for myself that he doesn't normally like to eat. I've made chicken fried rice for him a few times and although he'll eat it, it's not his favorite thing. I, however, absolutely love it and couldn't wait to make it tonight. I made the rice last night so it would have the right texture for tonight. 2 cups cold cooked brown rice. 8 oz chicken breast. Frozen mixed veggies (whatever you like or have on hand).

Lauren's Culinary Creations: My almost new kitchen!

http://laurensculinarycreations.blogspot.com/2007/09/my-almost-new-kitchen.html

Friday, September 7, 2007. My almost new kitchen! We had new granite countertops and backsplash installed today, as well as a new sink and faucet. I love love love it! Did I mention that I love it? We've been living with purple laminate countertops since we moved in. I'm not quite sure where the previous owners were going with it. Next up will be stainless steel appliances, hopefully some time next year and new flooring as well. Check out my before and after pics! October 18, 2007 at 2:33 PM. I finally m...

Tuesday, August 7, 2007. So delicious and so comforting! The recipe I made tonight was created by nestie MaryEllen and as soon as I saw it for the first time, I knew it would be love at first bite. I've made a few minor modifications and it is just fabulous! Here is my version:. 1 package ground turkey. 8 oz whole wheat noodles. 2 packages dry gravy mix (enough for 2 cups). Salt, pepper, red pepper flakes. 1 cup reduced fat sour cream. 4 oz shredded cheddar. August 8, 2007 at 8:36 AM.

Lauren's Culinary Creations: Mmmmmmmmeat sauce!

http://laurensculinarycreations.blogspot.com/2007/07/mmmmmmmmeat-sauce.html

Wednesday, July 25, 2007. You can't go wrong with spaghetti and meat sauce. It is so simple, classic and delicious. I made a big pot of sauce a few weeks ago and froze some of it to use this week. We're going on vacation tomorrow so I wanted something easy to make tonight. My meat sauce is very basic:. 2 links turkey Italian sausage. 1 lb of ground beef. Couple cloves of garlic. 1 bottle of marinara sauce (my husband only likes Ragu). 1 big can crushed tomatoes. July 25, 2007 at 7:33 PM.

Lauren's Culinary Creations: Beer can chicken - where have you been all my life?

http://laurensculinarycreations.blogspot.com/2007/08/beer-can-chicken-where-have-you-been.html

Monday, August 6, 2007. Beer can chicken - where have you been all my life? A few weeks back I picked up a vertical "beer can" chicken roaster, stashed it in the garage and forgot about it until tonight. I used it for the first time and let me tell you, it was the best roasted chicken I've ever made! Here is what my new favorite kitchen toy looks like:. It was cooked to perfection and so were the potatoes (they needed to be tossed about half way through). Subscribe to: Post Comments (Atom).

Lunch for the working girl.and boy. Monday, May 9, 2011. Summer time, and I crave fall? It must be the grass is always greener syndrome, but I have had a hankering from Rosemary for the past 24 hours. Rosemary immediately makes me think of Vermont and winter. Rosemary roasted chicken and potatoes and veggies. So, being that I have been praying for sunny and 70 degrees, I figure it's time to make something with rosemary! You will see a beautiful brown crisp on them and they taste AMAZING. Home with a cold...

I’ve been hosting these events when time permits, but sadly some of the websites/photos/reports are no longer on the web, as gaming sites are often purchased/merged/re-designed etc. In an attempt to track the previous lunches and to have somewhere to preserve the discussions, we now have LunchWithLuminaries.com. The most recent event was in Los Angeles on June 17, 2015, you can read about it here:.

Lunch with Marjorie | Everybody has a story…everyone can inspire

Praise and worship, faith, inspiration. Burning bushes, burning faith – Part 2. July 26, 2015. In 1995, Jane Logsdon and her husband Bean felt called to become missionaries in Israel. Jane’s initial resistance, and statement that it would take a burning bush to get her there, evolved into quite an experience. I asked her to recap. You didn’t hear God say anything, right? Then I thought, I’m not raising three kids by myself. That’s how much you didn’t want to go to Israel. The Logsdons arrived August 5.
