June 30, 2013. Baked salmon, roasted new potatoes, plantain and broccoli. I found fish to be an acquired taste. I like it simply cooked unless somebody else is in charge in which case they can fancy it up as much as they like. The best fish I have ever eaten was on a beach in Jamaica – it had just been caught, I picked it, the fisherman cleaned it and the chef fried it. Yum. You could put it into a steamer but I always use the oven. 1 portion of salmon or a fish of your choice. Salt, pepper to taste.

June 30, 2013. Bean dip – hummus alternative. I usually use chickpeas to make hummus but there’s no reason why you can’t use different beans (give it a different name). This recipe uses kidney beans. Like I’ve said before, I’m not one for measurements so these are approximations. Trial and error is in your favour. 5 dessert spoons of cooked kidney beans. 1 clove of garlic (use less if you don’t like too much garlic). 1 dessert spoon of tahini paste (optional). 1 table spoon of oil. Yeah, yeah, blah, blah!

Rice – no fuss. August 18, 2013. I’ve made quite a few dishes that would go well with rice so it’s worth sharing how I make it. If the truth be known, some people don’t like rice. And I don’t like a some people’s rice! That’s because they don’t cook it properly – it’s too starchy and or too watery and all-in-all it isn’t cooked very well. However, there are lots of really fool-proof methods. The one I use is one version of the absorption method. It’s used by many a good cook. Brown and white basmati rice.

July 13, 2013. That throw-away recipe from the omelette blog. Remember my throw-away recipe for a side dish to go alongside the omelette? It’s quick and easy and a good alternative to chips as they can be shallow fried and you don’t have to put them on kitchen towel to get rid of the excess fat because there isn’t really any. Potatoes (depends on your appetite) I use three small ones in this recipe. Salt for seasoning (optional). Take the potatoes out of the microwave and slice them. Rice – no fuss.
