A gateau for a special occasion: four layers of cake with truffle filling and silky chocolate icing. Divide evenly between the cake tins. Bake for 1–1¼ hours or until springy to the touch and shrinking away from the edges of the tin. After 10 minutes turn on to a wire rack to cool and remove the paper. The cake can be made and assembled the day ahead and kept in the fridge – best to ice with the ganache icing on the day of serving. Cakes freeze well filled but not iced. 225g (8oz) butter, softened.

Back to Great British Bake Off Recipes. Mary Berry's simple Victoria sponge is perfect for serving with friends at teatime. Preheat the oven to 180°C/fan 170°C/gas mark 4. Cut 2 greaseproof paper circles, grease the sandwich tins with butter and put the circles inside. Grease the circles. Place the butter in a large mixing bowl, then add the caster sugar, self-raising flour and baking powder. Crack the eggs one at a time and then add to the bowl. Back to Great British Bake Off Recipes. Delicious crisp pastry with a smooth lemon filling. Can be served warm or cold. You will need a 28cm deep loose-bottomed tart tin. To make the pastry, measure the flour, butter and sugar into a processor. Whiz until the mixture looks like breadcrumbs and then add the egg and water. Whiz again until it forms a ball. Reduce the temperature of the oven to 160C/140C fan/gas 3. Transfer the tart and tray carefully to the oven and bake for 35-40 minutes or until just set...

Chicken Balls - really easy. 8ozs (225g) cooked and boned chicken. 4 ozs bread - crusts removed. 2 ozs pistachio nuts finely chopped or blitzed - if wanted). 1 tablspn. olive or a salad oil. Juice of 1/2 a lemon. Salt and white pepper. Flour for coating before frying. Sunflower or similar oil for frying. 1 Soak the bread in some water and squeeze out as much of the liquid as possible. Set aside. 5 Fry until golden, remove and leave on kitchen paper to get rid of excess oil.
