It is produced throughout Southern Italy, particularly in the Apennine Mountains. Shaped like a tear-drop, it is similar in taste to the aged Southern Italian Provolone cheese, with a hard edible rind. Burrata & Stracciatella. Mozzarella & Bocconcini. Cooking time: 40 minutes Easy to prepare. Cream: 500-600 gr – 125 gr fresh ricotta – 20 sugar – Cocoa powder – 1 albumen (egg white) – 20 gr Chopped walnuts – Brandy (optional). Dough: 250 gr Flour – 100 gr sugar – 125 gr Butter Vanilla essence – 2 yolk. 500 gr white flour. 15 grams of fresh yeast, or 8 g with longer rising times. 1 heaping tablespoon of honey or sugar. 15 g extra virgin olive oil. 250 gr Fresh Ricotta. About 10 tablespoon cool water.

Smooth and lightly smokey, scamorza melted over a ripe tomato atop a sweet, chewy crumpet. Sometimes in summer I just can’t face another salad. And thankfully a slice of Massimo’s scamorza, pronounced sca-MORT-za and a saucy crumpet lift this grilled cheese on toast out of the prosaic. Made the same way as mozarella, scamorza is salted, aged and sometimes smoked giving it a a thin edible rind.
