Poor, starving, 20-something still trying to survive in the desert, but slowly making waves, too. Here I am. Sitting on the floor of my new bedroom in my new apartment in Tempe, Arizona. I’ve officially survived my first week as an Arizona resident without anything horrible happening. My cat, Effy, is still getting used to the place, but we’re all coming along nicely, including my roommate, Amy*. For those that don’t know, this is my first time really. Poor, starving, 20-something still trying to survive in the desert, but slowly making waves, too. It’s been 53 days since I’ve moved to Phoenix. Fifty-three whole days, and while many people may not be surprised, I certainly am. Despite the negative occurrences, I was able to reach the light at the end of that tunnel with the help of good friends and family. I’m still in an iffy spot, sometimes, but my support system is solid. I’m extremely thankful for that. In other news, good things. October 26, 2013.

I made it and brought it to a good friend’s house for a cook out. So it’s a perfect pasta salad too. It tastes like stuffed artichokes. Yummy, right? 1-10 oz can Artichokes, reserve liquid. 2 T Lemon Juice. 2 T Olive Oil, divided. 6 oz Sun-dried Tomatoes in Oil. 1/2 T Red Pepper Flakes. 2 T Parsley, chopped. 3/4 C Bread Crumbs.
