This place is perfect for Bentley because he can hop from one activity to the next and never get bored. I make this salmon at work, it is super easy and they seem to love it. 4 (4oz) skinless salmon fillets, about 1 inch thick. 1/4 cup olive oil. 2 Tbs cooking oil. 6 wonton wrappers, cut 1/2-inch thick strips. 4 cups arugula or baby spinach. 2 Meanwhile, for dressing, in bowl whisk together reserved juice, olive oil, and sugar; season with salt and pepper. I didn't make the wontons to go with this recipe, but I'm sure they are probably good with it.

It was also easy, so I will definitely make it again. It's from the "Cook's Country" magazine. 5 c low-sodium chicken broth (be sure to use this or it will be salty). 4 T unsalted butter. 2 c Arborio rice. 3 garlic cloves, minced. 1 1/4 c grated parmesan cheese. 1 T chopped fresh parsley (I used dried parsley and added it when I added the rice).

His mobility has been pretty limited until today because of his pain and even more so because of his catheter, but we spent a lot of time yesterday building train tracks, racing cars, coloring, and doing puzzles in his bed. I am so glad hes feeling better! Best news Ive heard all day! We are all praying our hearts out over here!
