Thursday, May 17, 2012. Oatey Crunchy Coconut Cookies. Oatey Crunchy Coconut Cookies. 1/c cup white sugar. 1/2 cup brown sugar. 1 teaspoon vanilla extract. 2 cups all purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 2 cups quick oats. 2 cups rice cereal. 1 cup flaked coconut. In a large mixing bowl cream shortening and sugars. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut.

We've seen three robins, we can no longer keep ice cubes frozen in our trunks and the Dairy Queen is open. Officially Spring. Maybe shutters will make an appearance this summer? We woke up to a snowy wonderland this morning, and how better to celebrate a day off school than blueberry muffins and The Devil Makes Three on Sonos. Don't even get me started on Sonos. I love that thing. Life changing, for reals. The second best thing about days off school? When I was a young mama, many moons ago, I thought, oh won't life be easier when the kids are in school.
