Thursday, November 24, 2011. Recipes abound. We had a great Thanksgiving today. starting the day out with Mass and watching J play football outside. It was a gorgeous day- sunny and 70 and I got to just sit outside with my face in the sun while J chased the small one around the playground. It was super relaxing. Then home to cook, watch football and eat! Everything turned out delicious and I ate more than my fair share. First recipe- my favorite muffins! 1c whole wheat flour. 3/4c all purpose flour.

J's off at his first Gators game with some guys from our neighborhood and I'm missing GermanFest up in Lafayette. so I decided I needed cookies today to make the afternoon a bit more enjoyable! Friday, April 27, 2012. I modified a recipe I had used before and didn't like and it came out much better. Soak 1 to 1 1/2c garbanzo beans overnight (12 hours). Then do it again. It's best if you soak with some lemon juice (or lime, I didn't have lemons this time) and have the water be boiling when you pour it over. Friday, October 7, 2011. And here's the cake. This is my go-to favorite chocolate cake recipe. I vegan-ized it yesterday and it turned out great! Not the healthiest ever, but delicious. Preheat oven to 350F. Grease an 8x10 pan. Stir in 1c boiling water and pour into pan. Bake for about 25-30 minutes (I did 25 in a glass pan yesterday). I used to poke holes in it and pour condensed milk mixed with cocoa over it. But using chocolate soy milk actually made it pretty moist by itself and I didn't miss it.

Thursday, August 18, 2011. This one is for you Laura! I LOVE this recipe for tomato eggplant couscous. And have made it for company way too many times already. For me it has been hard trying to "prove" myself (to myself really) diet wise and so I use this as my fall-back recipe to serve to meat lovers. and pretty much anyone else who comes over- it's my new no fail recipe! I like the new blog look! My husband doesnt eat meat and my kid cant eat dairy so maybe Ill get some good ideas too! 21 day vegan kic...

Thursday, September 1, 2011. I ran out of oatmeal this morning- I always eat quick oats with berries, almonds, flax and maple syrup in the AM- and didn't have time to make a smoothie. So I improvised and 'came up' with an idea that is probably not new or inventive to most. ;). Leftover brown rice straight out of the fridge with slivered almonds, ground flaxseed (you did know that your body can't process whole flaxseeds, right? Saturday, April 21, 2012. I made this the other day:. Red pepper, chopped up. Red cabbage, chopped up. It makes a good cold salad or dip. I used it for a filling in a tortilla shell like a burrito. I would recommend keeping the lime juice off until last minute if you want to store it in the fridge for more than a few hours. I'm on the hunt for a good falafel recipe. Anyone have one?
