我家大少很喜歡吃京滬菜的小吃, 差不多每次在外吃飯, 都會點這些小吃! 給他品嚐, 也經過第一次試做後, 而作出現在的 " 改良版﹒鎮江肴肉. 登場, 口味比較給我們, 也次我要試做四喜烤麩, 也是大少的至愛小吃! 好吧, 這次所用材料不多, 但就需分次進行! 雪藏咸豬手 1隻 (800G, 是連骨的). 雞湯 (300ML 水 1000ML). 魚膠片 (14片, 約35G). 1) 先將雪藏咸豬手解凍, 沖洗乾淨, 備用. 2) 用煲將水煮滾, 放入白醋, 水滾後放入咸豬手煮15分鐘 (水要蓋過咸豬手面). 3) 拿出咸豬手, 以清水沖/浸至咸豬手冷卻後, 再在咸豬手的底及面均勻塗上胡椒粉. 4) 利用高壓煲, 放入薑片﹑雞湯及咸豬手, 高壓煲煮 30分鐘. 5) 煮好的豬手湯留用, 拿掉薑片及隔去面層的油份. 6) 因煮豬手的湯還熱, 直接將魚膠片放入內, 利用湯的熱令魚膠片溶化即可, 間中需攪拌湯料, 免魚膠片沉澱而結塊. 7) 拿出咸豬手, 將皮起掉留用及將肉撕碎, 骨頭還可留用(文章尾部告訴你). 9) 拿走保鮮膜及壓著的盒子, 將餘下的豬手湯汁倒入盒內, 冷藏至凝固.
