This dish is absolutely delicious and something that must be on rotation. I could eat this weekly! Make vegetarian by omitting the prosciutto. I served over pasta. For the hungry man in my house. 2 large zucchini, cut lengthwise. Coarse salt and pepper. 1 T extra virgin olive oil, plus more as needed. 5-6 oz prosciutto, sliced thin. Fresh mozzarella cheese, sliced thin.

The urge to make something green was overwhelming. 1/4 cup grated pecorino romano (or more). 1/4 cup organic half and half cream (or less or none). Chopped fresh spinach, 1 cup. 1 T chopped parsley. Pour egg batter into a cup with spout. Fill. Bake at 400 for 15 minutes, then broil for a few minutes on high. Doubling the dry ingredients….flour, baking soda and powder. Lots of cinnamon, 2T. 3 drops of vanilla creme.

All the ingredients have been sitting on my counter now for 3 days, it was time.
