I have cooked this a couple of times and it tastes great every time. This recipe was first published in Saveur in Issue #128. Honey and balsamic vinegar are the sweet and sour agents in this recipe. 4 10-oz. bone-in pork chops, frenched. 3 tbsp. extra-virgin olive oil. Kosher salt and freshly ground black pepper.

Green Chile Pork Pozolé. 8226; Extra Virgin Olive Oil. 8226; 1 largish Onion, chopped. 8226; 4 Garlic cloves, chopped. 8226; 3 stalks of Celery, chopped. 8226; 2 lbs Pork Tenderloin, cut into 1/2 inch cubes.

Large tortilla (you can also use small, we like burrito size tortillas). Handful of favorite cheese. Butter for the outside of the quesadilla.
