Naturally, cheese sauce can be used to cover a cooked head of small cauliflower: in other words, that other nursery classic, cauliflower cheese (Nigella, p476). There is another reason, besides my fondness for cauliflower that I wanted to make this cauliflower cheese. My dad used to make an amazing cauliflower cheese, enveloped in a thick, rich, savoury, cheesy, mustardy sauce. Corner-cut topside of beef. Again, Nigella serves this part of a meal, with new potatoes with truffle oil, peas or a dark leaf salad and rice pudding. Once again, I have decided to serve this with roast potatoes (which my OH has kindly offered to make) and roasted asparagus (yet again! The beef, tomato, onion and red wine totalled 10.12. Beetroot soup
It seems odd not to be convinced about beetroot but to be passionate about this, because in a way this thick, velvety soup, is the sweet, smooth essence of beef (Nigella, p436.). This recipe does seem to have a lot going for it, though. I love the inclusion of Dijon mustard. As you may know, I love Dijon mustard and my OH and I always have a pot in our fridge. Nigella says that she rather loves this with maple syrup and bacon and so I, too, am making the toast with both of these accompaniments. In fact, Nigella’s method is very similar to one of the first Nigella recipes that I ever made from Nigella Bites (my first Nigella book); pancakes with wafer bacon and maple syrup.
