Over for dinner, she was eating mainly paleo and, along with my dairy-free requirements, I was also avoiding Vitamin C in preparation for my upcoming eye surgery ( that never happened. A journey into a world free of dairy. On January 15, 2013. So, I’m not the best cook. Or baker. I’m not terrible, but definitely have my challenges. I’m also addicted to muffins. Donuts? Forget it. Bagels? Can take ’em or leave ’em. Cupcakes? Eh, they have their place. But muffins. Oh, yes. I’ll eat those all the time, any time. 400 calories? Oh, but it’s SO worth it! No matter.
