香川県の県庁所在地である高松から、田園風景の中を琴平電鉄に揺られること30分。陶（すえ）駅で下車すると一面に緑が広がっており、そこから更に車で少し走ると「綾菊」の文字が見えてくる。 綾菊酒造は、終戦末期に近隣の五つの蔵が合併してできた蔵元である。一番古い蔵の創業は寛政二年で、現在の生産量は千石程。香川県と言うと水不足のイメージが強く稲作や酒造りのイメージはなかったが、近隣を流れる綾川由来の地下水は、創業当時から一度も枯れたことがないという豊かな水源だ。仕込み水としてだけでなく、洗浄用の水や風呂水まで敷地内で使うあらゆる水を全てこの地下水でまかなっている。また蔵のある綾上町は圏内でも有数の米の産地で、その品質は大正天皇御即位の際に献上米産地に選ばれたほどだ。 まず見学して感じたことは、「気負うことなく淡々と酒造りを行っている蔵」ということだ。 いい意味で、力みがない。よく見せようとか、上辺を取り繕うようなところが全く感じられない。 白山を背景に田園風景の中を車で走っていると、白黒の壁で統一された建物が見えてくる。これが、手取川正宗で有名な吉田酒造店だ。...石川県白山市は、霊峰白...
