양파 품종은 겉껍질 색깔로 보면 흰색(white), 노란색(yellow), 빨간색(red) 이 있다. 우리나라에서 생산 유통되는 품종은 대부분 노란색이며 흰색은 없고 빨간색 양파도 한 품종만 생산 유통되고 있다. 흰색 양파는 미국에서 주 로 재배된다. 재배 출하시기로는 조생종, 중생종과 만생종으로 구분된다. 조생종은 5월말부터 수확이 가능한 종이고 중생종과 만생종은 6월말부터 수확이 가능한 품종이다. 일반적으로 형태가 납작한 조생종은 허리가 높은 구의 형태의 만생종보다 저장력이 낮고 알뿌리 내의 당도가 상대적. 으로 높은 만생종이 조생종보다 저장력이 높다. 모양으로 보면 편형, 편원, 원형, 타원형, 원추형에 이르기까지 다양하다. 초기에는 조생종은 편평형, 중만생종은 편원형의 양파가 주류를 이루어 왔으나 수요의 변화와 더불어 최근에는 조생 및 중만생 구분 없이 구형에 가까운 품종 위주로 개발되고 있다.
