Trust me, I'm a chef. Here’s a whole front pig leg from Afton Field Farm. This is normally cut into a boston butt, picnic roast, and trotter. But here, I butchered it minimally (took the breast plate off and trimmed it to the blade) and slashed and roasted it. Turned out well.
