Gently toss together carrot, zucchini, apple, coconut, almonds and orange peel; set aside. Labels: Bread and Rolls.

Devin’s Banana Bread. 3 ripe bananas, mashed. 1 stick of margarine. 1 teaspoon baking soda. Beat the sugar and margarine in an electric mixer. The batter must be made 12-24 hours in advance. Make them the night before and it is so quick to have great waffles in a hurry. 1 3/4 cups wh. Ole, low fat, or skim milk. 8 T unsalted butter, cut into 8 pieces. 2 cups unbleached flour. 1 1/2 t instant dry yeast. 1 t vanilla extract. 1 cup whipping cream.

I quadrupled this recipe for 4 large chicken breast halves). 1 t chili powder. 2 t olive oil. 1/4 t ground cumin. 1/8 t ground ginger. 1/8 t ground cinnamon. 1/8 t freshly ground black pepper. 2 chicken breast halves. I just rubbed the paste on my skinned/boned chicken breasts and let them marinate a couple of hours in the fridge, worked great!

I used my left-over cafe-rio chicken and thought this casserole with wonderful, even better the next day. (Nobody else liked it as much as I did, but what do they know.) (I didn't use the fat-free stuff either, but I am sure it would still be good.). 1 cup pre-shredded 4-cheese Mexican blend cheese, divided. 1/3 c fat-free milk.

Very important to follow the recipe but so easy if you do. If you try and put the milk in with the sugars (as you do in fudge making) the candy will turn lollypop hard instead of chewy like a tootsie roll. I usually take it off the stove at 265 instead of 275 but I do live in the mountains, maybe that makes a difference! 1/2 Cup light corn syrup.

Tuesday, July 31, 2012. Citrus berry quinoa salad. 1 C almond milk, plain or vanilla (I used regular 2% milk). 1 C quinoa, rinsed. Zest of 1 medium orange (I omitted this). 1 1/4 C fresh blueberries. 1 1/2 C fresh raspberries. 1 Tbsp plus 1/4 C honey. Sliced or chopped almonds. Combine the milk, water, quinoa, cinnamon, zest and 1 Tbsp honey in a medium sauce pan. Bring mixture to boil, lower heat to medium-low, cover and simmer until liquid is absorbed. 2 medium parsnips, peeled and cut into pieces.
