It turns out the real reason they created Denali National Park was to save the sheep (goats) from hunters. Really. You hear that story wherever you go. From the Southern Table. Catfish: A Savor the South Cookbook. The World in a Skillet. Baby, It’s Cold Outside. And Cucumber Lime Gatorade is a Thing. Consequently, the pantry is running a little low. We’ve gotten to rice and beans night. We did spice things up a little bit. A can of store brand corn and a can of Ro-tel made our rice something special. Sunday, February 19, 2012. Gluten Free Zucchini Bread. 1 C vegetable oil. 2 C zucchini, grated/shredded. 3 C gluten free flour (see below for gluten free flour mixture). 1 t baking soda. Mix first five ingredients in one bowl. Mix last four ingredients in another bowl. Add the two mixes together. Pour into two greased loaf pans. Bake 350˚ for 45 minutes. Bread is done when toothpick comes out clean. Yield: 16 servings (8 per loaf). For Gluten Free Flour I use the following mixture. 2 C white rice flour.
