Just finished kegging my beer for the Emerald Coast Beer Festival. The festival is this Friday in downtown Pensacola. Just like last year, I'm bringing my take on a mostly forgotten style of beer from the southern region of Belgium: The Cucumber Saison! S excellent Fig Wit beer that I'm sure won't last long. In Pensacola, FL. 12 lb 2-Row Malt. 1 lb Flaked Rye. 1 lb Crystal 40. 2 oz Northern Brewer Hops @60 min. 1 oz Chinook @30 min. 1 oz Cascade @15 min. 1 Whirlfloc tablet @15 min. 1/2 lb Malto Dextrin @15min. Mash at 152f for 60 min. I get about 78% efficiency with my brewing set-up. Make necessary adjustments for your homebrew situation. Ferment with Safale US-05 Yeast or any American ale yeast.
