Brewing my way to beer perfection. Wednesday, July 23, 2014. West Yorkshire Yeast Review. Admittedly, while I didn't get around to brewing a whole. Ok, so not the best results with the ordinary bitter. So what about this second one? Maybe this beer is still too young - I'll give it another week or two - but I don't have high hopes for it. The goal is to make 10 gallons of a single wort, then split it into two 5 gallon carboys to ferment seperately for two different beers. I love the big boys like BCS, Abyss, Ten Fidy, Speedway, Yeti, etc. but haven’t ventured to try one before mostly because it’s easier to drink 5 gallons of lower alcohol beer and it’s much cheaper to make smaller ABV beers. But we’re gonna splurge here and hopefully create a beer that ages well. OG – 1.098. FG – 1.023. ABV – 10.1%. IBU – 60. SRM – 54. 2-Row – 15 lbs. White Wheat – 1 lb. UK Pale Chocolate – 1 lb. C-80 – 12 oz.

One of the great things about beer is how much of the history of it is pure fantasy. We Americans tend to think we have invented beer and have improved in every way on what was done in years past. We also translate styles in weird ways. Take Scottish beers for example. What comes to mind? Malty, malty, malty. Why on earth do we think this? Because it is what is most commercially available.

Wednesday, January 30, 2013. When I started brewing I was really into Murphy's and Beamish nitro stouts. I brewed a few of my own attempts at the Dry Irish Stout with less than stellar results. The first batch was overcarbonated and very acrid. The second batch was much better, but not quite perfect. I've always wanted to brew a stout for St. Patrick's Day, and this year I'm finally going to get it done. 8 lbs Marris Otter. 1 lb Flaked Barley. 1 lb Rye Malt. 625 lb Roasted Barley. 375 lb Chocolate Malt.
