TBoB – Taking the Bollocks Out of Baking. A Straightforward Approach to Bread →. July 28, 2015. It always happens to me. I start off with good intentions and take a load of photographs before everyone arrives. Then Jay says do you want to try this year’s cider and it’s down hill to Monday morning. But I can vaguely remember it being one of the most pleasant and relaxed baking weekends we have had. I did still manage to take a few more snaps. Bella’s Couronne Bordelaise in the centre. TBoB – Taking the Bollocks Out of Baking. Trefriw Sat am →. July 9, 2015. Gert asked for Tex-Mex bread this week. I think he was expecting an old favourite like Black Bean and Jalapenos so he was quite surprised when he collected his order this afternoon, a brand new, purpose designed Texas Tomatillo Bread. Tomatillo Salsa, plus Chiles Serrano, plus soured cream – not to mention the Lone Star stencilled in Chile Ancho powder. Where else could you get a bespoke service like this? Trefriw Sat am →.

TBoB – Taking the Bollocks Out of Baking. August 22, 2016. This started off as a joke, making a bread of beetroot, buttermilk and cheese – beetroot is a bit of a cliche. But it came out really well. Not only that, it came out about the most beautiful loaf I ever made. The colours were so amazing I nearly phoned a friend who is a prize-winning photographer to do the job properly. A good example of what happens when you slash a dough just off-centre with the blade angled in. Raw Beetroot 9.7%. The other we...

Date & Sultana Soya Bread | The PArtisan Baker

TBoB – Taking the Bollocks Out of Baking. Date and Sultana Soya Bread. Otherwise know as “Off Yr Ocar”. Why? I thought yoga people might well go for soya milk as opposed to dairy, and honey rather than sugar. Oats go well with soya milk, and together with a dash rye add a bit of earthy rusticity. To be honest I think the sultanas crept in because I was short of dates. Such is the scientific approach to bread formula creation. Leave a Reply Cancel reply. Enter your comment here. TBoB – Taking the Bollocks Out of Baking. That ominous last sentence was not without reason. They were just a little vague and what you might call approximate. The only consistent factor was they all began “One liter sourdough” – no hydration specified. Basically I had to rework them all. This is one of the less weird ones although it’s more of a cheese bread than a potato bread and note the 125% starter. Leave a Reply Cancel reply. Enter your comment here. Address never made public). TBoB – Taking the Bollocks Out of Baking. Aloha Again →. Aloha, aloha …. July 23, 2015. Just for a change Gert’s sent me to the Pacific. “Haiwaii” he commands. All the bakers I tell this to make the same joke: pineapple, ham, cheese – why not put it on a round, flat dough? Google leads us to King’s Haiwaiian, a bakery set up in Hilo in the 50s and to the usual bunch of crappy recipes imitating the original. Had some for breakfast, half an hour out of the oven ….
