Our Bees

Our busy little bees live in a number of hives throughout the farm. They spend their days zipping in and out of the National Park, our own woodlands and bush lot, and the neighbours gardens. The bees are a rich, golden colour and quiet to handle. We only extract the honey when the hives are full and the bees have capped the honey cells in the honeycomb, ensuring a rich coloured and flavoured honey.

Our Cheeserie is simple in design and fitout. All our cheeses are handmade by my husband and I with attention to detail. We pasteurise using a batch style pasteuriser to minimise the disturbance to the milk. This helps enhance the subtle flavours and maintain the creamy texture. We have maturing rooms in which we mature our semi-matured and hard cheeses.

We have a small herd of Riverine Buffalo, which is a milking breed of buffalo. They are smaller than the swamp buffalo found in the north of Australia and quiet to handle. We still have a bit of work to go to convince the girls that milking is a good idea, but I’m sure that with some tender loving care and more importantly, some yummy buffalo food, they’ll come around.

Our dairy ewes (‘the girls’) consist of 130 East Friesian and East Friesian cross ewes, with plans to build up to 180 milkers. The East Friesian is a milking breed which originates from the Netherlands. They can produce up to 2L per milking and produce milk which is high in milk fat solids, perfect for cheese making. Porongurup Pure is located at the base of the Porongurup Ranges, 14km east of Mount Barker in Western Australia. Our farm is nestled between local vineyards, spring fed creeks and jarrah forests with mountain ranges to the north and south of us – it’s our own little slice of paradise.
