Fresh ginger, the size of your thumb. 1 garlic bulb, crushed. Celery, 5-6 pieces, chopped. Carrots, peeled and roughly chopped. 1 large leek, split, clean and chopped. 1 tbsp Chinese black vinegar/any wine vinegar will do. 1 onion, chopped. 2 1/2 litres water. 3-4 pieces whole star anise. 189; teaspoon freshly ground black peppercorn.
