Quirky, happy, healthy geek. In the beginning, I was naked. The path to sustainable life happiness begins with a desire to pursue betterment from within. The 39th hour of joy. Starting a blog was not my idea. But like the photo above (taken in Jerusalem), I have been facing the wall so long, I am now stuck in it. Encouragement has guided me here. Quirky, happy, healthy geek. Cuban black beans in a crock pot. I won’t lie to you and say that I do not like the Trader Joe’s Cuban Black Beans. It is awesome for quick and dirty. At the end of the 9 hour work day, I want instant gratification just as much as anyone else. As I have matured, I sincerely understand the nutritious and family value that a home made meal brings. Do I like to cook? Do I like to spend the whole day in the kitchen? I took a nap while everything was simmering. 2 tbsp minced garlic.

I have never cooked chorizo before. As a Californian transplant of 30 years, I typically do not eat chorizo. No real reason why, I just have not. I went ahead and sautéed the onions, garlic and loose chorizo. My hubbie said it will probably look like chili. Who knows? This has me thinking, I just might be able to do a vegetarian version of ...

Quirky, happy, healthy geek. Picadillo – modified crock pot version. Ah the picadillo. A savory cuban version of beef hash. So my hubbie has a distinct requirement for his picadillo. He wants it on the “dryer” side. Reading over many recipes I find that Cuban food has an interesting twist to it, it requires a chunk of time to simmer. Just before serving, I dressed the picadillo with olive oil and served it with a side of plantain chips. Conclusion, happy Cuban husband and completely relaxed Asian wife.

Quirky, happy, healthy geek. Coffee cake in a crock pot. Coffee cake, coffee cake why do you have to bake? It is so so so hot outside, the heat I can not take! Pardon, I just had to break into rhyme. I figured this out! I am starting to bake with my crock pot. Both me and the hubbie have gluten and dairy allergies. The gluten free thing is not cheap. I’m trying to find a cheap and meaningful alternative and alas! I think I found it. The original recipe is on We laugh, we cry, we cook. 1/3 c coconut milk.

He is still so sweet and cuddly, but he’s also independent and full of curiosity! I’ve been working on a big sewing project for Jax. I’m making him a Quiet Book. I’ve been busy, busy, busy on our family blog! We are so ready for autumn. We set up a reading corner. We talked some more. About nursing a toddler. I shared a beloved childhood photo.
