אפשר גם ציר בקר. גבעול רוזמרין, עלה דפנה ומספר גבעולי טימין. מקמחים, מפלפלים וממליחים את הבשר. משחימים את הבשר בטיגון בשמן חם עד חם מאוד עד שיוצא שחום בכול צד. מוצאים מהסיר ומניחים בצד. שימו לב: חשוב להשתמש בסיר כבד לקדרה. מטגנים באותו הסיר בצל כדקה, מוספים גזר, סלרי ושום ומטגנים עוד דקותיים תוך כדי ערבוב. מוסיפים יין לבן, מגרדים את השאריות של טיגון הבשר מהתחתית ומערבבים עם היין. נותנים ליין להתאדות מספר רגעים (3-4 דקות). הבשר מוכן כאשר הוא מתפרק בקלות מהעצם. להיות נדיבים מאוד ברוטב. סלט כרוב לבן ←.
