Loves to eat, cooks out of necessity. Thursday, February 16, 2012. This is my favorite dinner recipe in recent memory: easy, delicious, and makes great leftovers! You can be as creative with the toppings as you want. We enjoyed it with tortillas chips, shredded cheddar, sour cream and chopped avocado (I am trying to embrace the avocado). :) Also, by way of confession, my kids don't eat soup, so they had cheese quesadillas (phewww, feels good to get that off my chest).
