米粉在以前算得上是 高級食品 ，只有喜慶宴客、特殊節日才會以 炒米粉 招待客人。 根據新竹市志上的記載， 米粉 這種食物的起源是: 當 五胡亂華， 華人南遷閩浙時，仍以稻米榨條而食，即當今之米粉也 、 米粉之 製法由福建惠安傳入台灣 因此史料上的說法認為 中國大陸的北方人習慣吃麵條，到了南方以米來製作麵條，是今日米粉的源起。 早期所謂的米粉寮，指的應是郭家祖厝 間尾仔 這一帶，後來是因為 隙仔 做米粉的居民搬到 土窟啦 、陳家祖厝也有七家加入做米粉的行列，米粉寮的範圍才含蓋彎潭、 延平路以北，整個大南勢也成為米粉的重鎮。 新竹的特產- -新竹米粉，其實可以區分為 水粉 和 炊粉 兩種。 以前人所稱的米粉只的是比較粗的水粉，因此米粉又叫做 粗米粉 ，炊粉的粉絲比較細，所以又叫做 幼米 粉 或 細米粉。 蒸的閩南語叫 炊 ，故名之炊粉,炊粉的粉絲非常細而且蒸出來以後要稍為冷卻一下才能 披 乾，而水粉通常比較粗，壓條成型後就放在開水中煮，閩南語叫 灑 ，煮好了以後還要放在冷水泡一點。 若以乾濕度來分，製作好的炊粉不 經風乾來煮食，叫 澹(濕)炊粉 ，以當天供應新竹附近的小吃店為主。

想到新竹一定會想到米粉，郭泉等四兄弟在新竹 大南勢 落戶生產米粉，開啟新竹生產米粉的時代，(大南勢為現在新竹市延平路一段291至401巷巷內)，大家所熟知的新竹名產 米粉 聞名全省，而唯有 郭家 米粉獨到的製造技術和品質，才能成為遠近馳名的新竹米粉之代表。 在民國五、六十年代的全盛時期，大南勢一帶，米粉業者幾乎全部姓郭，農莊主人郭先生， 是從郭泉這一脈相傳而來，郭莊主的父親郭煒是郭泉的孫子，他不但致力改善米粉品質引進自動化設備，並自創南興牌米粉， 開發出10多種口味，並以精緻的包裝，使南興牌米粉在市場上屢創佳績 ，如今除了光復路 沿線，城煌廟旁小販販售，老鍋牌米粉外在大潤發等大型量販店也都可買到，此外，南興牌 米粉也在 外銷市場佔有重要的一席之地。
