福島地方一円で食べられている いかにんじん は 冬の伝統料理として多くの市民に愛され食べ継がれてきた 福島地方発祥のとてもおいしい郷土料理 です. 市内に住む ７０ ８０代のおばあさん数人に聞き取り調査を行ったところ 本人のお母さんはもちろん 祖母も作っていた とのことなので １００年 １４０年位の歴史があると思われます. いかにんじん を食べる地域は 福島周辺 県北地方 に限定 されており 例えば同じ福島県でも郡山市 白河市等では食べられていません. 米沢市 相馬市 白石市等 福島市近隣の市では 一部の家庭で食べられていますが これは 福島か嫁いだ方が伝えた と言われています. 北海道に 松前漬け という いかにんじん に酷似した郷土料理があり どちらが元祖なのか 議論されていますが 松前漬け のルーツは こんぶいか 注 であり いかにんじん とはまったく異なる松前地方の郷土料理です 食物研究家 神田 美枝 氏談 昆布とスルメを細く切り 醤油に漬け込んだもので 江戸時代頃からあったようである.
