A New Yorker, living in Wisconsin who loves to cook and write about it. The good life →. I must confess. This recipe is semi-homemade. I was pressed for time, but wanted to make something that would utilize the strawberries and rhubarb sitting in my refrigerator. What I came up with was a buckle-like dessert that knocked my family’s socks off. I threw this recipe together on a whim. The amount of strawberries and rhubarb you use is up to preference. 1-15 C rhubarb, diced. 1-15 C strawberries, sliced.

I had to get over the terrible year that was 2012. A lot of healing has taken place since Jeff died. I still miss him so. 4 Weight Watcher points each (if you are counting) and only 135 calories. Low fat AND low calSCORE! The recipe is easy and makes 12 perfect cupcakes. 1 3/4 C moist-style devil’s food cake mix.
