I tried to buy it and learned some interesting things about pork nomenclature. I assumed (wrongly) that pork shoulder came from the front legs of a pork and pork butt came from the hind legs. Wrong! Sea Bass with Leeks, Potatoes, and Thyme. The Zuni Café Cookbook. 4 pieces sea bass fillet, about 6 ounces each and 1 to 1-1/2 inches thick. A few sprigs of fresh thyme.
